Make sure to use active or instant dried yeast for this recipe and not bread-maker yeast. The friction from kneading the dough creates warmth that activates the yeast, so there is no need to preheat the milk. It's best to make the dough ahead of time and let it ferment overnight in the fridge, although you can also chill it after its initial rise. Gluten strength will be achieved by using a stand mixer to knead the dough.

Ingredients

Dough

  • 224g milk
  • 2 beaten eggs
  • 2 tbsp honey
  • 7g active dried yeast
  • 500g flour
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger powder
  • 1 tsp salt
  • 100g soft (not melted) butter

Filling

  • 50g butter
  • 1 tbsp honey
  • 50g brown sugar
  • 100g raisins
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger powder

Glaze

  • 1 tbsp honey
  • 1 tbsp water

Instructions

    • Add the milk, eggs, honey, and yeast for the dough into the bowl of a stand mixer with a dough hook.
    • Add the flour, spices, and salt.
    • Mix on the lowest speed for ~5 minutes. The dough will be sticky.
    • Increase the mixer to the next speed.
    • Add the butter slowly.
    • Mix for ~10 minutes, until the dough is pulling away from the sides of the bowl.
    • Shape the dough into a ball. Place into a lightly oiled container with a lid or plastic wrap.
    • Leave the dough to rise at room temperature for 1 hour.
    • Put the dough into the fridge for at least 1 hour, or overnight.
    • When your dough has been chilled, make the filling by melting the butter in a small saucepan.
    • Remove the butter from heat and add honey, sugar, spices, and raisins.
    • Remove the dough from the fridge.
    • Lightly flour a space to roll out the dough to a 10 x 15in rectangle.
    • Spread the filling evenly over the dough.
    • Roll up the dough into a log shape.
    • Cut into 12 pieces.
    • Place the buns cut-side down into a baking tray or dish.
    • Cover the dish with plastic wrap and allow to rise for 2 hours.
    • Preheat the oven to 375°f.
    • Bake for 20-25 minutes.
    • Warm the honey and water for the glaze and brush it over the hot buns.
