Lughnasadh is the perfect time to celebrate the bounty of the season, and these Blackberry Thyme Scones are a delightful way to do just that. The sweetness of ripe blackberries combined with the earthy, herbaceous notes of fresh thyme creates a flavor profile that perfectly captures the essence of this first harvest festival. These scones are easy to make and are sure to impress your loved ones at your Lughnasadh gathering.

Ingredients
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh blackberries
- 1 tbsp fresh thyme leaves
- 1/2 cup heavy cream
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Using a pastry cutter or your fingers, work the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
- Gently fold in the blackberries and thyme leaves, being careful not to crush the berries.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. The dough will be slightly sticky.
- Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick circle.
- Cut the circle into 8 wedges and transfer them to the prepared baking sheet.
- Brush the tops of the scones with a little extra cream and sprinkle with sugar, if desired.
- Bake for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
- Allow the scones to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serving Suggestions and Variations
- Serve these Blackberry Thyme Scones warm with a dollop of clotted cream or a drizzle of honey for a truly indulgent Lughnasadh treat.
- For a vegan version, replace the butter with cold coconut oil, the heavy cream with full-fat coconut milk, and the egg with a flax egg (1 tbsp ground flaxseed mixed with 3 tbsp water).
- Experiment with different berry and herb combinations, such as raspberry and basil or strawberry and mint, to create your own unique Lughnasadh scone flavors.

As you savor these delightful Blackberry Thyme Scones, take a moment to reflect on the abundance and blessings in your life. Share these treats with your loved ones and express gratitude for the bounty of the season. May the flavors of Lughnasadh inspire you to embrace the magic and joy of this special time of year.
