Zucchini Fritters with Herb Yogurt Dip: A Tasty Way to Celebrate Lughnasadh

Ingredients
For the Fritters:
- 2 medium zucchini, grated
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 green onions, thinly sliced
- 1 large egg, beaten

- 1 cup plain Greek yogurt
- 2 tablespoons chopped fresh dill

Instructions
Making the Fritters:
- Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the zucchini, flour, Parmesan cheese, green onions, and beaten egg. Season with salt and pepper and mix well.
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom.
- Scoop about 1/4 cup of the zucchini mixture into the skillet for each fritter, flattening them slightly with a spatula.
- Cook the fritters for 2-3 minutes on each side until golden brown and crispy.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
Preparing the Herb Yogurt Dip:
- In a small bowl, mix together the Greek yogurt, dill, mint, garlic, and lemon juice.
- Season with salt and pepper to taste.
- Chill the dip in the refrigerator until ready to serve.
