Instructions
- In a large bowl, whisk together the flour, sugar, and salt for the crust.
- Using a pastry cutter or your fingers, work the cold butter into the flour mixture until it resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, until the dough comes together.
- Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- In a separate bowl, toss together the sliced apricots, sugar, cornstarch, vanilla extract, and cinnamon until the apricots are evenly coated.
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
- Transfer the dough to the prepared baking sheet.
- Arrange the apricot mixture in the center of the dough, leaving a 2-inch border around the edges.
- Fold the edges of the dough over the apricots, pleating as necessary to create a rustic, freeform tart.
- Brush the beaten egg over the crust and drizzle the honey over the apricots.
- Bake for 35-40 minutes, or until the crust is golden brown and the apricots are tender.
- Allow the galette to cool for 10-15 minutes before slicing and serving.
